Bacon Wrapped BBQ Chicken Breast!
I made a quick family dinner and forgot to take Pictures! But, I was able to snap a photo of a leftover before it was gone. It is always so easy to come up with side dishes, but for my family not so easy to determine our protein. We only eat poultry and fish so we easily get tired of the same old grilled or baked chicken. So I figured I would try something new!
This recipe only took about 30 minutes total and it came out delicious. It was a huge hit with the family. You only need chicken, bacon, cheese, and bbq sauce!
3 Large Chicken Breasts cut into thin strips. This equaled to about 4 slices per breast. I then seasoned the chicken with garlic powder, onion powder, and salt. Next I grilled them in a pan just until they had a bit of color. While they were grilling I par-cooked some turkey bacon so that they would crisp up faster in the oven with the chicken!
Once the chicken had just enough color on it, I dipped them in a basic bbq sauce. You can use any kind you would like. I personally like mine a bit spicy so I added some hot sauce to the bowl. I dipped the chicken the wrapped it with the bacon and layed it on a sprayed baking sheet. I then put it in the oven on 375 for about 15 mins.
After the 15 minutes where up I put the oven on broil and added the mozzarella cheese on top. It takes only a couple of minutes for it to melt and I removed it and added a bit more sauce to the top. The chicken was juicy and flavorful, and went great with our side dishes. I have since made this dish a few more times and each time it tastes great!
