Quick Shrimp Tempura Roll
Shrimp Tempura homemade or store bought
1.5 cups Sushi Rice
Soy sauce or teriyaki sauce can be used to dip
About four 6 piece rolls.
For this recipe we used store bought shrimp tempura. Of course you can make your own, it will be the same. We baked it in the oven to get it crispy. While that was going we made a batch of sushi rice. White rice, rice wine vinegar, sugar, and salt. It was very quick and easy. That took about 15 minutes to cook. Avocado was sliced into strips, as well as the cucumber.
Using a saran wrapped sushi mat, we placed our rice in a thin layer. Next we put down the nori. The cucumber and the avocado were placed on top of each other so that the shrimp tempura can have a bit more room. Everything was then rolled up up tightly together. We removed it from the mat and placed it on a platter. Furikake which is a rice seasoning, was added for extra flavor!
